Wow! What a weekend. After our action packed weekend last week, we vowed to do less this weekend and we massively failed. I mean, massive failure on all levels. We seriously packed so much in and it’s hard to pick something we could have omitted. Between a 10 year high school reunion (mine…where did 10 years go?!), a christening, a baby shower, and some house projects, the time flew by and I can’t believe it is Monday already. For the positives, we have a three-day weekend coming up! And I can’t think of a single person who doesn’t love a three-day weekend. In my opinion, they’re the perfect length. Long enough to save one day for chores and get some relaxing done on the other two days, which is just perfect To me Memorial Day is the official kickoff to summer so with that in mind, I have a no-cook recipe for you today that is the perfect summer appetizer. Light, refreshing, healthy, and did I say no cooking is involved? Ahhh, I love “recipes” like this. This recipe is more like an assembly, but I have a feeling you won’t mind the ease of this recipe.
To make this recipe you need a watermelon, preferably juicy and sweet because who likes them any other way? When I was buying the watermelon, I was talking to a woman at Trader Joe’s and we were discussing how to select a good watermelon.
- 4 oz feta cheese, in a block (I used low-fat)
- 1/4 of a large watermelon, cubed into bite-sized pieces
- mint leaves
- balsamic for drizzling
- Cube the watermelon into bite sized pieces.
- Cube the block of feta.
- To assemble, stack the feta and watermelon with a mint leaf in between.
- Using a skewer or toothpick, skewer the stack.
